ingredient
1 kg fresh ox tongue (lidah sapi)
4 pcs shallots (bawang merah)
4 pcs garlics (bawang putih)
1/2 pc onion (bawang bombay)
1 pc scallion (daun bawang)
1 pc small tomato (tomat)
2 pcs carrots (wortel)
8 pcs button mushroom
1 small ginger about size of your little finger (jahe segede kelingking)
1/2 pc green or red or yellow capsicum
1 tblsp sushi vinegar
1 tblsp worchestire sauce
1 1/2 tblsp salt
1 1/2 tblsp sugar
1/4 tblsp black peper
4 tblsp sweet soy sauce
1 tblsp soy sauce (kikkoman)
2 tblsp maizena
100 cc cream milk
mayonaisse as you like
how to:
ox tongue cook:
clean ox tongue with flow water and cut excessive fat and bone
boiled 1 lt water on pressure cooker
added oxtongue, shalots, garlic, onion, scallion, ginger after water boiled
added sushi vinegar, worchister sauce, salt, sugar, black pepper, sweet soy sauce, soy sauce
closed pressure cooker
cooked with pressure for 45 minutes
bring out from pressure cooker only ox tongue
cut slice in 1/2 cm or 5 mm
put again in pressure cooker
added carrot after cut slice about 1 cm
added button mushroom after cut slice about 1/4 cm or 2.5 mm
added capsicum after cut slice about 1 cm
added tomato after cut into 4 section
boiled with lowest setting of your stove for 1 1/2 hours
added hot water if ox tongue not cover with water
bring out all from pressure cook, and leave broth on the pressure cooker
make sauce :
add maizena which mix with milk to broth on pressure cooker
cook with lowest setting of your stove while stirred it until boiled
served oxtongue on plate and pour with sauce
add mayonnaise on top of ox tongue if you like
